Wheat Berry Salad

This is another versatile dish that can be a side dish or a main. Change up the ingredients and you have so many possibilities here.
 
INGREDIENTS
Fair Shares
1 cup wheat berries
2 tbsp oil
2 tsp honey
Radishes, chopped
Green onions, chopped
Feta cheese, crumbled

Other ingredients
Juice of one lime
1 avocado, peeled and diced
1/2 cup purple cabbage, shredded
Herbs of choice, chopped
Salt and pepper
 
METHOD
Bring 1 cup wheat berries and 3 cups water to a boil. Turn heat to simmer and cover for 35 minutes. Drain wheat berries and place in a bowl. Add the remaining ingredients and stir to combine. Taste and adjust if needed. Add a bit more honey if you want it sweeter and add a bit more lime juice if you want it tart.
Chill for an hour for best flavor. Refrigerate for up to 3 days.
