Sweet Potato with Rarebit
Rarebit is a welsh cheese sauce made with sharp cheddar and dark beer. It’s the perfect savory compliment for a baked sweet potato.
INGREDIENTS
Fair Shares
Sweet potato, baked for 1 hour at 400 degrees F
Cheddar cheese, shredded
2 tbsp butter
Other Ingredients
2 tbsp flour
2-3 tbsp dark beer (I used Civil Life Brown)
1/2 tsp Worcestershire sauce
1/2 tsp mustard powder
METHOD
Melt butter in a saucepan. Add flour and whisk to combine. Add beer, Worcestershire sauce, and mustard powder. Stir and add cheese a bit at a time and stir with a spatula. Add cheese in small
batches and stir to melt. If the rarebit is too thick, add a bit more beer till you get the desired consistency. The traditional method of serving rarebit is spreading it on thick bread and broiling the top. I love scooping it in a baked sweet potato.
