Daikon Refrigerator Salad

What to do with the Daikon radishes? Make a refrigerator salad! You can call it a slaw if you want, but this is what I call anything mostly raw veg that can keep in my refrigerator for several days. I added some kale and a shredded carrot for color and variety. You can add a protein and make it a meal.
 
INGREDIENTS
Fair Shares
3 (mini) Daikon radishes, peeled and cut into matchsticks
2 green onions, sliced thin
2 cups kale, washed and chopped
Bag of shoots if you have them.
1 tsp honey
 
Other ingredients
1 carrot, shredded
3 tbsp rice wine vinegar
1 tbsp sesame oil
1 tsp Dijon mustard
Salt and pepper
Black sesame seeds
 
METHOD
Place kale in a large bowl. Add 1 tbsp rice wine vinegar and massage kale till the leaves darken a bit and they wilt. Add radish, green onions, and carrots. In a small bowl, whisk the remaining vinegar with honey and Dijon mustard. Add in the sesame oil and combine. Toss into the radish, kale and carrot bowl. Salt and pepper to taste and sprinkle black sesame seeds. Cover and refrigerate. This will keep for at least 3 days in the refrigerator.
