Tomato, Cuke and Corn Salad
1-2 tomatoes
1 cucumber
2 ears of corn
1-2 T. slivered green onion greens and/or other herb
2 T. rice wine vinegar (optional)
salt and pepper to taste
Preparation
Cut the tomato and cucumber into bite-sized pieces. Shuck the corn and remove the silks. The easiest and least messy way to remove the kernals from the cob is by holding the shucked ear upright in a large, steep-sided bowl and running your sharp knife down the entire length of the cob at the base of the kernal. Turn and continue until the cob is clean. Toss all ingredients together and gobble gobble gobble.
Variation: Use balsamic vinegar and put a peach in it! The sweet addition is so good.
