Loaded Summer Squash
I love potato skins, so I had to try this! It really works with zucchini and summer squash. The veg is crunchy and the texture with melty cheese and crispy bacon is just perfect. I topped the finished product with a sprinkle of green onions I got this week.
INGREDIENTS

Zucchini
Yellow squash
Ropp green onion cheddar, shredded
Bacon, browned and crumbled
Green onion, sliced
METHOD
Slice zucchini and squash lengthwise and scoop out seedy section. Save this to add to pasta sauce or soup. Preheat oven to 400 degrees. Brown bacon in a skillet and drain on towels. Place veg on a rimmed baking sheet covered with parchment paper and spray with cooking spray. Bake for 8-10 minutes. Take pan out of oven and top veg with cheese and bacon. Turn on broiler and place on second rung below broiler (parchment will burn if too close to broiler.) broil for 5 minutes. Top with green onions and serve. I like to add a few drops of hot sauce.
You can stuff these with cheese and pepperoni and dip them in pizza sauce for a different variation.
