Creamy Winter Squash Pasta
Roasted winter squash is the perfect base for a cozy pasta sauce, rich and creamy without being too heavy.
INGREDIENTS

Winter squash, roasted and cubed
1 tbsp olive oil
1/4 cup grated cheese of choice
Pasta
Other Ingredients
2 shallots, minced
1 cup broth or stock
1 cup broth or stock
1/2 cup milk
METHOD
Cook pasta according to package directions. Heat oil in a saucepan and add shallots. Sauté a few minutes and add cubed squash. Stir and season with salt and pepper. Once the squash gets a bit brown, take off heat and add it to a high speed blender. Puree and add cheese, milk, and broth. Adjust seasoning to taste. Drain pasta, reserving a bit of the water in case you need to thin the sauce a bit. Toss sauce with pasta. Garnish with a bit of cheese, cracked pepper, and herbs.
