Homemade Toastie

I often fall down the rabbit hole of watching food video shorts. Some of my favorites are from Dr. Vegan, who makes simple and delicious recipes I make often, and Notorious Foodie, who makes complicated and scrumptious looking dishes I will never attempt, but love to look at.

This Jamie Oliver short showed up in my feed and I couldn’t wait to try it because it’s exactly how I cook–don’t make me follow a recipe! I now make this regularly, sometimes savory with cheesy goodness, sometimes sweet with peanut butter, fruit and honey. Always delicious and super satisfying!

Ingredients

4 tablespoons flour

1 teaspoon baking powder

1 tablespoon plain yogurt

4 tablespoons water

Pinch of sea salt

Olive oil

Filling ingredients of choice

Method

Start by prepping your fillings. Grate cheese, chop and slice meat and vegetables so they are ready to go.

Now make the flatbread. Put a small-medium (9-inch) frying pan on a medium heat. Whisk together flour, baking powder, yogurt, salt and water until smooth.

Put a glug of olive oil into the hot pan, then pour your batter in and use a spatula to gently and evenly spread the batter across the base of the pan. As it starts to cook, drizzle a little oil around the edge of the pan. When the top starts to bubble, loosen the edges with a spatula, and jiggle to make sure it’s loose before adding your filling.

Add your toppings on half of the flatbread, then fold the the other half over the filling. Reduce to a low heat and cook an additional two minutes or so on each side, until golden brown.
