Spaghetti Squash with Chorizo and Black Beans
Remember all that spaghetti Squash I cooked? Here’s what I did with the other half of it. This was just as easy as the pesto and even better: it’s a one pan meal! This came together quickly because I cook my beans in a big batch and freeze them in 1.5cup bags. I also chop and freeze some bell peppers when we are overloaded with them in the summer and use them all winter. I freeze my jalapeños whole and slice them thin while still frozen with a sharp knife and they almost melt into a dish.
INGREDIENTS
All Fair Shares!
Chicken chorizo sausage
Cooked spaghetti squash
Cooked black beans.
Jar of tomatoes
Green pepper (chopped and frozen)
Jalapeño (frozen and sliced very thin)
Cheddar for serving (I had Marcoot.)
METHOD
Remove sausage from casings and brown in a large skillet. Add squash, beans, strained tomatoes, and peppers. Stir to combine, breaking tomatoes up. Simmer for 5 minutes or until warmed. Top with Fair Shares cheddar of choice.
