Sausage Rice Skillet

Here’s another dish that’s really versatile. I had a big zephyr squash so I chopped that up to add. You can add Zucchini, broccoli, peppers, tomatoes, or spinach/kale/Swiss chard.
 
INGREDIENTS
Fair Shares
1 package pork sausage
1/2 cup rice
1 container Field to Fire Summer Sofrito (see note for substitution)
Zephyr squash
 
Other Ingredients
1 cup tomato sauce
 
METHOD
Bring 1/2 cup rice and 1 1/4 cups water to a boil. Cover and simmer for 30 minutes.
 
Meanwhile, brown sausage in a large lidded skillet. When the rice is almost done, add chopped veg to pan. Add rice, sofrito, and tomato sauce. Simmer for 5 minutes till flavors combine.
 
It would also be good with some shredded cheese mixed in, as a stuffing for peppers, or topped with a fried egg. Go crazy!
 
Note: If you don’t have the sofrito, you can add chopped tomatoes, sweet and hot peppers, onion, garlic, beans.
