Roasted Beet Salad with Kale and Goat Cheese
I think this will be a Halloween tradition. Peeling beets is messy and you kinda look like you just killed someone. Pro tip: use a plastic cutting board to slice beets. You may stain wood.
I trimmed the tops off 2 large beets, wrapped them in foil, and roasted them in my airfryer for 20 minutes at 400 degrees. I let them cool and they were easy to peel. For the salad I just trimmed and chopped the kale, added a good pour of Kreta balsamic, Kreta olive oil, a small squirt of honey and tossed to combine. I added a bit of salt and pepper and arranged on a plate. Sliced my roasted beets and sprinkled a bit of goat cheese on top. The only items that weren’t from Fair Shares were the salt and pepper. Simple and delicious
