Roasted Asparagus Salad with Mayfair Dressing

This recipe is inspired by two local dining experiences. I had this lovey roasted asparagus dish at Lucky Accomplice with Green Goddess dressing, and Madrina in Webster has an incredible salad with Mayfair dressing. This salad is lovely and simple. You can add protein or some grains to make it a meal.
 
INGREDIENTS
Fair Shares
Asparagus
Lettuce
 
Other Ingredients
1 cup chopped celery
1/4 cup chopped onion
2oz anchovies
1 1/2 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp fresh lemon juice
2 garlic cloves
Salt and pepper
Bread crumbs for garnish
 
METHOD
Brush asparagus with olive oil. Roast asparagus in a 425 degree oven on a baking sheet with parchment paper for 7-10 minutes. In a high speed blender or food processor add the celery, onion, anchovies, mayo, lemon juice, Dijon, garlic and salt and pepper. Pulse to combine, scraping down the sides as needed. Taste and adjust seasonings.
 
TO SERVE
Toss lettuce in a few spoons of dressing. Plate and top with asparagus. Drizzle a bit more dressing on asparagus and garnish with breadcrumbs.
