Cabbage, Potato, & Polish Sausage One Pot Meal

AKA one of my fave comfort meals of all time! Sometimes I forget about veg in my fridge. I found a cabbage that had been in a drawer for a while and then thought about the potatoes staring at me growing extra eyes all I needed was an onion, polish sausage, and a bit of chicken broth to make this dish.
 
INGREDIENTS
 
Fair Shares
Cabbage, chopped
Onion, diced
Potatoes, peeled and diced.
Olive oil
 
Other Ingredients
Polish Sausage 
1/2 cup chicken broth (1 cup broth for Dutch oven method)
 
Let’s mis en place!
 

METHOD
 
Instant Pot
Heat oil and sauté onion for a few minutes. Add sausage and stir a bit more. Layer, potatoes and then cabbage. Pour broth and sprinkle generous amount of salt and pepper. Place lid on pot and cook for 8 minutes.
 
Dutch oven method
Add oil to large Dutch oven. Sauté onion till translucent. Add sausage and stir a bit. Add broth, potatoes, and cabbage. Bring to a boil and turn heat down to simmer. Place lid on and simmer for 10 minutes or until potatoes are soft. Season with salt and pepper to taste.
