Nicoise Salad

I love this salad because you can switch out the protein and some of the veg and still have a great meal. You can do asparagus instead of green beans, salmon or chicken instead of tuna. As long as there are potatoes, egg, olive, and a protein dressed with a simple vinaigrette, it’s Niçoise.
 
INGREDIENTS

Romaine
Arugula
Eggs
Green beans
Radish
Lemon cucumber
1/4 cup olive oil
1/2 tsp honey
 
Other Ingredients
Olives
Capers
Baby potatoes
Grilled salmon
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 small shallot, diced (about a tsp)
Salt and pepper
 
METHOD
Boil water in a saucepan and add eggs. Cook for 7 minutes. With a slotted spoon, remove eggs and place in an ice bath to cool. Add salt to water in pan and boil green beans for 3 minutes. Remove with slotted spoon and place in ice bath. Add potatoes to pot and boil 10 minutes or until fork tender. Again with the Icebath. Blot potatoes and beans dry. Peel eggs. Whisk oil, vinegar, honey, shallot, and mustard in a small bowl. Season to taste with salt and pepper. Toss romaine and arugula in a bowl with half of the dressing. Arrange on plates and add salmon, egg, potato, green beans, olives, sliced radish and sliced cucumbers. Sprinkle with capers. Drizzle more dressing and dig in!
