Lion's Mane Mushrooms

We’ve heard from a number of members that they don’t know how to use these mushrooms, so here is a suggestion that I’ve tried and enjoyed, and also a link to aubreyskitchen.com, where you’ll find a recipe for Vegan (or Vegetarian) Crab Cakes that looks and sounds like a special treat.

Having read a number of website articles on lion’s mane mushrooms, a common preparation is to slice them into thin (1/4 inch) slabs and dry fry them in a single layer in a skillet over medium-high heat until they release the moisture and begin to brown around the edges. Then add oil and/or butter, salt and pepper, garlic and hot pepper flakes and continue to cook until crispy and golden brown, about 5 minutes per side. They’re great as is, as a side or the main course, with their meaty texture, but they are also delicious added to other dishes, such as pizza, or tossed with a creamy pasta or polenta, but keep in mind that you may lose the crispy texture.
