Easy Tomato Gratin
I just threw this together in a glass pie pan but you can use any medium sized dish or pan for this.
INGREDIENTS
Fair Shares
Tomatoes (I had sungold plus 3 beefsteak from my neighbor’s garden)
Olive oil
Crusty bread (or make toast with a few slices)
Other Ingredients
Sugar
Salt and pepper
Parmigiano reggiano cheese
METHOD
Preheat oven to 375 degrees
Chop larger tomatoes if using and place in dish. Top with smaller tomatoes, leaving them whole. Toss crusty bread with a bit of oil in a small bowl. Scatter on top of tomatoes. Sprinkle a pinch of sugar and salt and pepper on tomatoes Glug about 3 tbsp of oil on tomatoes and top with grated parmigiano reggiano cheese. Bake for 35-40 minutes. You can add fresh herbs if you have them after you remove the pan from the oven. Basil would be amazing.
