Ground Chicken and Bok Choy Bowl
I made this dish because I love bok choy! It’s dubbed a superfood because bok choy is full of selenium which helps clear toxins from the body. This plus it’s a great source of vitamin C. Also I forgot to use the mushrooms from last week and found that if you pulse mushrooms in the food processor, they blend in with any ground meat!
Bok Choy, chopped and cleaned
Mushrooms, chopped in a food processor
2 tbsp soy sauce
1 tbsp olive oil
Chopped Basil (for garnish)
1/4 cup hoisin sauce
1 tbsp sriracha ( or to taste)
8oz ramen noodles
Cook noodles according to package instructions. In a large skillet, heat olive oil. Add chicken and brown. Add chopped mushrooms, soy, hoisin, and sriracha, stirring to combine. Add bok choy and sauté till green parts are wilted. Combine with cooked noodles and garnish with chopped basil.
