Freeze Your Peppers
Did you know that peppers freeze well? I freeze extra peppers all summer to use in stews, chili, and jambalaya.
Chop bell peppers before freezing. Jalapeños can be frozen whole and chopped easily while still frozen. I roast poblanos and then peel and remove the seeds. I love them so much roasted that I buy extra all summer and all winter I will grab some out and slice them frozen to throw in soups, tacos, or chili. I have a fave meatloaf recipe that calls for 1/4 cup chopped bell peppers. I packaged these separately and marked them. They are ready when I am.
Pro tip: seal the bag almost all the way, slipping a metal straw in at a corner. Suck the air out and then pull the straw while sealing the rest of the bag.
