Easy Oven Roasted Squash
3 Patty Pan Squash
1 or 2 zucchini or summer squash
2 garlic cloves, minced
2 tbsp olive oil
If using a zucchini, slice 1/4 inch thick slices and place in colander. Sprinkle with salt and let sit for 30 minutes to sweat out excess liquid.
Slice patty pan into quarters.
Toss squash in olive oil and minced garlic cloves. Spread onto sheet pan with parchment paper and bake at 400 degrees for 20-25 minutes. Sprinkle with salt and pepper.
My zucchini came out mushy so I folded it in with 2 cups of cooked brown rice (also a fair shares item) and it was perfect!
