Celery Stir Fry
I didn’t know what to do with the celery. It was a bit bitter and the leaves were very bitter. I tried several ideas with the leaves but nothing panned out (punny!) so I put them in the compost bin and focused on the stalks. WOW this dish was delicious. I had freezer-burned shrimp that was previously cooked, so I salvaged it by pulsing in my food processor to grind it. I folded this into the dish at the end and the textures were perfect together! Of course you can use any ground meat but here’s a great way to save freezer burned shrimp.
INGREDIENTS
Fair Shares
Celery stalks, chopped
Onion, diced
2-3 (or 5) garlic cloves, minced
Oil
Soy sauce (3 tbsp)
Other Ingredients
Hoisin sauce (about 3 tbsp)
Sriracha to taste (I squirt a lot on but I love it spicy)
4 oz rice noodles or ramen
Fish sauce
METHOD
Boil noodles according to directions.
Heat a large skillet and brown meat of choice. Remove meat from pan and set aside. Add a bit of oil to pan and sauté onion, celery, and garlic. When onion becomes translucent, add soy, hoisin, sriracha, and fish sauce. Here’s where I added the ground shrimp, add your meat back in if using. Drain noodles, reserving a bit of cooking water. Add noodles to skillet and stir. If it looks a bit dry, add cooking water a tbsp at a time. You can always add more soy, hoisin, sriracha if needed.
