Blender Chili
I had mushrooms in the fridge and forgot about them. They got a bit slimy so I chopped them in my food processor and folded them into the best chili I’ve made in a while! I got the idea from making blender burgers. The concept is to blend finely chopped mushrooms with ground beef to cut down on meat consumption while adding nutrients.
INGREDIENTS

Mushrooms, chopped in a food processor
I jar tomatoes
Black beans, cooked
1 tbsp soy sauce
1lb ground beef
Green pepper, chopped and frozen
Jalapeño peppers, frozen whole
OTHER INGREDIENTS
1 onion, diced
3 cloves garlic, minced
1 cup chicken broth
2 tbsp tomato paste
1 tbsp ground cumin
2 tbsp chili powder
2 tbsp fish sauce
1-2 oz unsweetened baking chocolate
METHOD
Sauté ground beef in large pot. Add onion and garlic and stir till onion is translucent. Add chopped mushrooms and stir for a few minutes.
Chop jalapeños while still frozen with a sharp knife. Add to pot and add the rest of the ingredients. Bring to a low boil and turn heat down to simmer for 30 minutes.
This recipe is super adaptable to what you have on hand. I’ve made it several times without the mushrooms, but this added a wonderful texture and another layer of umami. 100% will make again.
