Bison Meatloaf 2
I made a double batch of this during or last snowstorm. It’s so good and easy. Because the bake time is 1 hour I usually throw in a few potatoes while I’m baking it and everything is done at the same time.
INGREDIENTS
Fair Shares
Ground bison
1/2 container of quark (or sub 1/4 cup cream cheese)
1 egg
1 tbsp soy sauce
1/4 cup chopped bell pepper ( I vacuum seal and freeze my surplus from summer)
1/4 cup chopped onion
1/2 cup cooked rice
Other Ingredients
1/3 cup celery
1 tsp basil
Salt and pepper
METHOD
Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well with clean hands. Spray a loaf pan with cooking spray. Place meat mixture in loaf pan and smooth top. Bake for 1 hour.
It’s delicious on its own, but my husband is apparently part Neanderthal and covers it with ketchup.
