Cauliflower Adobo
Here’s a fun and different side dish for thanksgiving or any occasion. It’s got a bit of sweet, a bit of tang, and a lot of flavor with very little effort. If you are lucky to get purple cauliflower it’s also gorgeous!
Broccoli Cheddar Potato Soup
With the weather turning cold and rainy, I think a warm bowl of soiup is in order.
Kale Caesar Salad
Make your favorite salad a superfood!
Easy Au Gratin Potatoes
Comfort food at its best. This recipe would be a great opportunity to add in some sunchokes with the potatoes if you aren't familiar with them.
Tip: Freeze Your Peppers!
Do you know you can freeze peppers? This time of year I have so many peppers rolling around in my fridge. When winter hits and I make chili, stew, soup, or meatloaf, I am happy I took the time to chop and freeze them.
Spaghetti and Zoodles with Meatballs
If you want your family to eat more veggies, hide them in plain sight. I have found that if I mix spaghetti with zucchini spirals (zoodles) I don’t even know I’m eating them! All ingredients are Fair Shares.
Easy Roasted Patty Pan Squash
by Beth Sorrell
This is how I roast all my veggies.
(Sara's note: I roast everything to within an inch of it's life--for an hour or more--so it's caramelized and charred; it makes even your least favorite veggies delicious!)
Celery Apple Salad
This recipe is perfect for the celery we received. Mine was a tad bitter by itself, so mixed with the apple and adding a light vinaigrette was the perfect balance. It’s just so easy to make too!
Salade Nicoise
Simple, yet satisfying, and pretty to look at. Substitute at will.
Cucumber Salad
Simple, fast and delicious!
Fig and Cantaloupe Salad with Homemade Balsamic Glaze
Almost Homemade Pizza
Sometimes you just want a homemade pizza and Fair Shares makes it so easy! Frozen dough, jarred sauce, and fresh mozzarella are all you need!
Feta Dill Zucchini Bread
This was so delicious! I lean towards the savory side so I was excited to make this. I had the one slice and then my dog somehow got it off the counter and ate the whole thing! I’m making another loaf right now.
Blueberry Cinnamon Crumb Muffins
You'll definitely want to get this recipe under your belt while blueberries are still available!
Simple Sauté of Celtuce
Celtuce is a Chinese lettuce. The leaves are edible raw, but the stalk needs to be peeled to be eaten. The stalk has a subtle nutty taste, so I gave it a quick sauté with just a few ingredients.
Garlic Scape Falafel
I get so excited when garlic scapes are in season. I basically use them in any recipe calling for garlic, but this is a favorite.
Turkey Zucchini Meatballs
This recipe was actually for burgers but I don’t have buns so I made meatballs. They turned out beautifully and I think this recipe is best for meatballs because the meat was pretty sticky. You can try making burgers but they may fall apart.
Sizzling Mint Zucchini Salad
This recipe is inspired by two local dining experiences...This salad is lovely and simple. You can add protein or some grains to make it a meal.
Roasted Asparagus Salad with Mayfair Dressing

Miso Roasted Japanese Turnips
You can eat these right out of the oven or serve them at room temperature with a salad.
Daikon Refrigerator Salad
What to do with the Daikon radishes? Make a refrigerator salad! You can call it a slaw if you want, but this is what I call anything mostly raw veg that can keep in my refrigerator for several days.
Mushroom Risotto
When I saw that fellow member Jamie Valencheck Shupp was making mushroom broth [for Fair Shares,] I had to try it in my fave risotto recipe.
Frittata
I love this dish because it’s easy, versatile, and fairly healthy. You can eat it for any meal or freeze it for future meals.
Bison Taco Salad
The best thing about using ground bison for taco meat is that the meat is so lean that you don’t need to drain the fat! It’s also higher in vitamin b, zinc, iron, and omega 3 than beef. Winner winner taco dinner.
Vibrant Veggie Lentil Soup
Even in the spring and summer I love soup! Its an amazing way to get in more veggies and nourishing broth! I started making my own broth because I was not happy with most products on the market, nor did I want to spend the money on the few I did like.
Fair Shares Overnight Oats
The texture of overnight oats is different from the cooked version, but still very satisfying, and you can heat them up quickly if you prefer them warm.
Enchilada Casserole
Layers of roasted chicken, squash, beans, cheese and sauce with tortillas. You can really add anything to this, as long as you have enough cheese and sauce, it will be delicious.
Monte Carlo Bars
When Lindy told me she made this recipe substituting Marina's Cranberry Chutney and pecans from Fair Shares, I have to admit, I had no idea what Monte Carlo Bars were. My mind went to the cocktail with rye, which sounds fine to me, and also the Monte Cristo sandwich, which is something completely different.
Rice with Mushrooms and Sausage
This may be the best thing I’ve made in a while! I had lions mane mushrooms, but any mushrooms will work here. I didn't have heavy cream so I used sour cream and quark--it worked beautifully! Don't be afraid to use what you have and sub out ingredients make it vegetarian by leaving out the sausage.
Winter Squash and Lentil Chili
A recipe is simply someone else’s idea of how to make something.
I live by this quote. When I come up with a recipe for this group or any other recipe I will look at several different recipes and take parts of what I like and incorporate ingredients that I have. I rarely make a recipe as written. I hope you do this too. Swap out what you have in your share or your pantry.
Asian Lettuce Wraps
Whenever I pick up a lovey head of lettuce, I make this. It’s easy and delicious.
Chicken and Butternut Squash Thai Curry Stew
Warming and delicious.
Apple Chips
I have nothing against soft and chewy dehydrated apples, but once you've had a crispy, crunchy, snappy, flavorful homemade apple CHIP, you'll never be the same! Plus, the family will think you're a magician, turning unappetizing apples into the best thing they ever ate.
Beef Stew
by Beth Sorrell
WOW! Sometimes the easiest recipe is the best. This is super versatile as well. You can play up the sweetness of the potatoes or make it savory with just a few changes.

African Peanut Stew
by Beth Sorrell
This is traditionally made with sweet potatoes, but I love using butternut squash instead.
Cabbage Sausage Stew with Potatoes
by Beth Sorrell
Here’s what I did the other half of that giant head of cabbage.
Bison Chili with Roasted Poblanos
by Beth Sorrell
This week my recipe was inspired by a pasta recipe from the New York Times. Their recipe called for walnuts, but since I picked up the cabbage, pasta, leeks and pecans at the same time, this version was meant to be. And it’s delicious!
