Sautéed Zucchini Ribbons
This is such an easy way to prepare zucchini.

INGREDIENTS
Fair Shares
Zucchini
Olive oil
Other Ingredients
1 lemon
Salt and Pepper
METHOD
Cut the ends of a large zucchini and using a vegetable peeler, peel the zucchini lengthwise. Turn zucchini slightly after each slice and continue until you get to the seeds. Heat a large skillet with a generous glug of olive oil. Using tongs, add zucchini ribbons to the pan. Zest about 1/3 of the lemon into the pan and then add the juice of half the lemon. Sauté for about 5 minutes or until the zucchini softens. Sprinkle with salt and pepper.
