Enchilada Lasagna
This is so versatile! You can add whatever fillings you prefer. This one has shredded chicken, spinach, and black beans. Chunks of winter squash or sweet potatoes are fantastic here. You can use beef, pork, or tofu. Clean Plate Pantry’s New Mexican Red Chili Sauce is rich and delicious as the sauce here.

Spinach, cleaned and sautéed
Black beans, cooked

METHOD
Preheat oven to 350 degrees. Spray a large baking dish with cooking spray and spread a thin layer of sauce on bottom. Add a layer of tortillas, trimming to fit pan. Top with chicken, beans, spinach, sauce, and cheese. Layer tortillas on top and repeat fillings. Top with another layer of tortillas, thinly coat tortilla layer with sauce. Top with cheese and bake for 30 minutes. Let sit for 5 minutes before cutting to serve.
