Easy Roasted Patty Pan Squash

This is how I roast all my veggies.
 
Set the oven to 425 degrees. Line a sheet pan with parchment paper. Cut patty pan squash into 8ths if medium sized and 4ths if small. Pieces should be about 1 inch thick at the thickest part. Toss in olive oil and spread evenly within pan. Sprinkle with salt and pepper or seasoning of your choice and bake for 20 minutes, rotating pan at the 10 minute mark.
