Celery Apple Salad
This recipe is perfect for the celery we received. Mine was a tad bitter by itself, so mixed with the apple and adding a light vinaigrette was the perfect balance. It’s just so easy to make too!
INGREDIENTS
Fair Shares
Celery ribs, cleaned and chopped
I Apple, diced
Handful of pecans, toasted and chopped
2 tbsp olive oil
Dollop of honey
Other ingredients
1/2 tsp Dijon mustard
1 1/2 tsp chopped shallots
1 tbsp champagne or red wine vinegar
Salt and pepper to taste
METHOD
Whisk vinegar, mustard, honey and shallots in a bowl. Drizzle olive oil and whisk to emulsify. In a separate bowl, add chopped celery and onion. Toss with dressing to coat. Serve on a bed of lettuce and top with toasted pecans.
