Waldorf Salad

This recipe calls for pears and persimmons in addition to apples, but I wouldn't let that stop you from making it with straight up apples, since that's what we have on hand right now.

Preparation

2 cored and diced apples
2 ripe pears, peeled, cored, and diced (or two more apples)
1 cup seeded, diced wild American persimmons (or 1/2c. chopped dried apricots)
1 cup sunflower or pea shoots, rinsed and chopped, or left whole if preferred
1 cup pecans, halves or pieces
2 tablespoons fresh lemon or lime juice
Dash of salt, or to taste
Optional: 1/2 cup black pepper cherve goat cheese

Toss all the ingredients together in a large serving bowl. Serve immediately. Serves 6
