I always trying new ways to use veggies in my fridge. I had a lot of cremini mushrooms so I decided to stuff them with Fair Shares ingredients.
2 sausage links, casing removed (I used chicken andouille)
1/2 cup cooked brown rice
1/4 cup quark
1 tbsp olive oil
2lb large button or cremini mushrooms
2 celery stalks, chopped
1/4 cup chopped onion
Salt and pepper
Clean mushrooms and remove stems. Set stems aside and chop them. Heat oil in a large skillet. Add sausage and break up while browning. Once the sausage has browned, remove it from pan and add onion and celery to pan. Sauté till onion is translucent. Add chopped mushroom stems and a generous amount of salt and pepper. Add in quark and rice and stir to combine.
Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper. Sprinkle salt inside all mushroom caps. I filled the caps over the pan the stuffing was in so any extra just fell back into the pan. Place stuffed mushrooms on the parchment paper lined pan and bake for 20 minutes.
