Welcome to Week 9!

We look forward to seeing all full-share, mini-share, ODD-week half-share and Delivered share members tomorrow and Thursday.

Many thanks to our wonderful member volunteers who stepped up to offer their time to help us while we're short staffed this month (Lindy will be out on Thursday and Friday this week, so again, anyone available, let us know. As more and more fresh produce comes in, we would always welcome an extra pair of hands. We know that the members who volunteer gain a new appreciation of the effort that goes into getting the food in and out each week, not to mention the tremendous work that our rock-star farmers do to grow and raise all this beautiful, healthy food for us. If you'd like to get a little closer to your food, please contact us about coming in on a Tuesday or Wednesday late morning or early afternoon.

Baetje Cheese Tasting Next Tuesday, June 6th

Our cheese tasting for members and friends is next Tuesday, June 6th at 6p.m. It's FREE! Please mark your calendar and gather the troops, and bring a bottle of wine or beer to share. It's a party situation. RSVP by Sunday noon so I know how many people to order for.

Trades and Additional Purchases

Please read the rules of trading and how we like to receive your trades and orders on the Trades and Orders page of our website (note you must be logged in to access this page).

Place orders by noon* to orders@fairshares.org -- you can just reply to this email.
*Delivered-share members: please email by noon Wednesday OR wait until after you've received the Wednesday evening newsletter and order by 9:30a.m. Thursday. (Because we may no longer have certain items available, please check the Wednesday evening newsletter for the updated produce list).

Be sure to include your account name--which is your last name and pickup group, so we know where to send the food.

New Yogurt
Yo-Bul Sheep and Cows Milk Yogurt: $2.50/6oz.
Windcrest Greek Strawberry, Raspberry, Peach and Blueberry Yogurt: $1.50/6oz. Windcrest is now carrying only the Greek fruit yogurts.

Prairies Fruits Cheeses
Black Goat: $6.50. A bloomy-rind goat round dusted in vegetable ash to neutralize the acidity and give a mellow and buttery finish.
Little Bloom: $9.50. Bloomy-rind camembert style with a mushroomy rind and slightly tangy yet creamy interior.
Angel Food: $5. Bloomy-rind brie-type with a thin rind and creamy paste. All these cheeses are worth letting them come to room temp for the full-flavor experience.

Jowl Bacon
Looks like bacon, smells like bacon, tastes like bacon, acts like bacon, cheaper than bacon! $6/lb. Geisert or Circle B, $7/lb. Blind Star. This is delicious bacon from the jowl, rather than the loin. The pieces tend to be shorter, slightly thicker, and when cooked up crisp, I daresay it may even taste better than the regular bacon...but don't take my word for it. We got three pigs in and the jowl is stacking up.

Mr. Meowski's Sourdough
We're excited to include Mr. Meowski's Sourdough in the shares! Because of volume ordering, we are able to get a discount, so the retail price is $6, and trade value is $5 (so that we can sell it frozen for $5 without losing money on it.)

Companion Local Grains Project
Just in the nick of time, since we ran out of all the frozen porridge bread last week, Companion has started the next chapter of the Local Grains Project. We got a sample last week and can vouch for its deliciousness. We'll include it in the shares so everyone gets a chance to try it. $4.00. Read about these yummy buns below.

Kitchen Kulture

Strawberry Tamarind Dressing: $5.50/8oz. We thought having a lovely salad dressing in the shares during lettuce season would be appreciated. This sweet and tangy dressing also works well as a sauce for vegetables (like asparagus!) and roasted meats.

Saag Paneer: $11. With Mofu Tofu and local greens--just add rice, and maybe some sauteed chicken for a quick and tasty meal.

Coconut Grits: $10. Creamy coconut milk and grits? Okay!  I mixed this with Saag Paneer, for a win.
Cheddar Grits: $11. They're cheesy delish and the perfect base for a little grilled meat or fish. Greens on the side, please.

Moroccan Lentil Stew: $11. As seen in the shares! Heady Moroccan spices bring an exotic, savory flavor to the dinner table.
Pumpkin Risotto: $11. A hearty side dish with a little sweetness from the winter squash and dried fruit.

Date Lady
Organic Dates: $7.
Date Balsamic Vinegar: $6.25.
Date Syrup or Coconut Date Syrup: $8. Add the date syrup to your salad dressing, or use in place of honey in baking, or in your yogurt, or your oatmeal.

Some of the produce is limited, so please leave a second choice when you order, or don't plan to make even trades.

Yoder Sweet Cherries: $6.00/pt. Big, bright red, sweet cherries--the first of the season. So exciting. Hoping to see tart cherries soon.
Yoder Farms Strawberries: $6.00/qt. Every salad, every yogurt, every peanut butter sandwich...strawberries included.

Mast Rhubarb: $3.50/.75lb. Very limited--only a few, but we hope to get more next week.

Snow Peas: $3.50/.3lb.
Berger Bluff Carrots: $3.50.

Biver Kale: $4/13oz.
Swiss Chard: $4. Limited.
Lettuce: $3.50-$4.00. We should have a few extra lettuce mix as well as head lettuce shares.

Biver Japanese Turnips: $3.50. White, tender and mild, these turnips are great for salads, or raw on the veggie platter, but also saute up quite nicely and make a great little dish served over their own sauteed greens--just add garlic scapes!
EarthDance Rainbow Radishes: $2.75/.75lb. bag. Little purple daikon, green daikon and a few other pretty varieties. Unicorns not included.

Lee Garlic Scapes: $1.85/.3lb. Yay! These are delicious as a side dish, cut into 1-inch pieces and sauteed in a little olive oil (no need to add garlic!). Chop and use as you would garlic, and don't miss the garlic scape pesto recipe below!
Girod Green Onions: $2.00/bu.

St. Isidore Cippolini Green Onions: $3/lb.
Nolte or Elixir Leeks: $3.50/lb.

Bee Simple Shoots: $4. Not sure what we'll be getting tomorrow - pea, sunflower, maybe a super mix.
Ozark Forest Mushrooms: $7.00. A mix of Shiitakes and Oysters.

Biver Zucchini: $2.50/share.

Happy Milk from Ozark Mountain Creamery
Order by Sunday for pickup with your share.

Go Topless!

Woo woo. Take it off baby! When you receive root veggies with the greens attached, it's important to remove the tops from the roots. The greens are edible if they're in good shape--yes, even radish greens--and don't think that just because they are wilted that they are not good. They are just thirsty! Why? Because the roots and the greens are competing for the moisture in the plant. This is why you want to separate them. It will help keep your greens perky and your roots firm. Just cut off the roots below the rubber band or twist tie and... Read more
Binomial Name: Allium sativum L. When we found out the garlic scapes were ready, we were fairly giddy with excitement, what with garlic being our favorite vegetable and all. Garlic scapes are the above ground stalk and seed head of the hardneck garlic bulb. Scapes are often harvested about three weeks before the head of garlic reaches maturity. Removing the scape makes for a bigger garlic bulb.Read more

From charter member Joanne McAndrews: Got greens? And maybe some Fair Shares eggs, cheese, and bread? Here's a delicious brunch/breakfast-for-dinner casserole that turns spinach/kale/Swiss Chard, etc. into a main dish that the whole family will enjoy.Read more
I just found this "recipe" in the database, and it made me laugh at how pathetic and uninspired it is. It doesn't even have the decency to include a photo or to call for salt and pepper to taste. Just who does this recipe think it is? I hope I didn't make it up... Anyway, great ingredients don't need a lot of extras, so enjoy!Read more
