Welcome to Week 37


We're officially in the countdown to the end of Season 4 (Final Wednesday pickup is March 7th).

This means we're going to begin talking about Season 5. Due to the excruciating process of getting new members into the database, shifting people here and there to fill up each pickup group, and setting up all the recurring payments, we have a plan to make it easier on ourselves and avoid starting Season 5 with spaces left to fill because of people deciding not to join at the last minute.

We are going to begin the process of asking who is in and who is out for next season, and everyone has until March 1st to make your first payment. If you know you're in, you can set up your automated check payments now, according to the payment plans listed on the Membership page of the website, or let us know if you want to set up credit card payments. After March 1st, we will offer up any unpaid shares to those on the wait list. We will post a list at each pickup site so let us know as early as you can whether or not you plan to continue (don't worry, you won't hurt our feelings if you are unable or don't want to renew). The earlier we know, the earlier we can work on adding new members; we plan to take a vacation during our break this year, not work harder than usual, as in the past breaks!

Payments Due

End of quarter invoices. This year, we've been sending invoices for overages quarterly, unless you reach the $30 limit before the end of the quarter. If you received an invoice, please bring a check or EXACT CHANGE only to your pickup tomorrow. Please make a note of the amount so that we don't have to look it up for you, and be sure to include your pickup group (and member name, if it's different from what's on your check). If you are paying in cash, be sure that you have exact change, and that we note the amount paid on the check-in sheet next to your name, otherwise your account may not be credited for the payment. We appreciate your prompt attention to paying your overages right away since we pay our vendors upon delivery.

Extras Available

Place your orders and trades by noon the day of your pickup to orders@fairshares.org. Don't forget to include your pickup group and name! Check the price list on the website for pricing on all the normally available items. If you are trying to make an even swap, be sure to include back up choices in case we run out of your selected item.

Rav it up!
Mangia Pasta (now Midwest Pasta, but we like the name Mangia better) has a great array of ravioli to add a little excitement to your dinner plate! We only keep a few of each variety in stock, so please give second choices. Let us know which ones you like best.
Mushroom OR Four Cheese Ravioli: $8/lb.
Butternut Ravioli OR Sundried Tomato Ricotta Ravioli: $9/lb.
Goat Cheese Ravioli: $10/lb.

Chuck Roasts ($6.25/lb) and sirloin tip roasts ($6.50/lb) are still available (both average 3-3.5+ lb.). We also have some pork spare ribs ($4.25/lb, ave. 4.5+lb. slabs) which cook up wonderfully in the crock pot--look it up on Google, there are lots of recipes.

Apples! Fujis: 5/$4.45 Wowza, those are expensive (~ $2.50/lb.), but they're super crunchy and dee-lish!
Carrots: $3/.75lb. bunch
Parsnips: $3/.75lb. bag

Garlic: $1.60/four heads
Onions: $2/lb. red or yellow
Cippolini Onions: $2.50/lb. These are the wonderful flat Italian onions that are dreamy roasted.

Eggs: $4. We stocked up, figuring everyone might have run out over the break!
Veggie Stock: $4.25/pt. We've got frozen tubs of del Carmen vegetable stock which make a quick and delicious soup--just add roasted root veggies and rice or noodles!

Don't forget we have salmon!
$12.50/lb. coho (medium) and keta (mildest flavor, lowest fat, doesn't need to cook as long). Various sized fillets available. Order by the pound and we'll try to match it.

How Did You Start the New Year?

We made French toast with Companion's cranberry pumpkin seed bread. Another idea was to make bread pudding with it, but the French toast won out. Stephen made the egg/milk mixture for dipping, so I don't really have a recipe, but if I were going to make it, I would have cracked four our smaller eggs into a bowl with about a cup of milk, a dash of vanilla extract, and a sprinkle of cinnamon, and maybe even nutmeg. Then I got out the good butter from Our Garden and heated it up on the griddle while I dipped the first couple of slices in the eggs. We cooked it all up, ate a couple slices with maple syrup.

We have Marble Creek Maple Syrup for $8.25/pt. or Funks Grove Maple Sirup for $16--they're both pretty good, but I can't tell you the difference besides the spelling and the price. Perhaps we need to have a taste test. Today I ate a slice of the leftover French toast with peanut butter and Blue Heron Pomona's Ambrosia apple syrup. Tomorrow it might be almond butter and apple butter. The next day, we'll probably be arm wrestling for the last piece...
Our bread was pretty stale by the time we made it, so we let it soak a little longer than usual.
Skillet Peanut Tea Cake
from Grandma Grace's Southern Favorites

2 T. butter, plus extra for brushing
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup peanut butter
4 eggs, beaten
1/4 cup milk
1 cup pastry flour
1 teaspoon baking powder
1/8 teaspoon salt

Preheat oven to 350 degrees. Melt butter in heavy, 8-inch oven proof skillet. In a mixing bowl, combine the sugars. Add the peanut butter, eggs, and milk mixing well. In a small bowl mix the flour, baking powder, and salt. Stir into the peanut butter mixture a little at a time until smooth.

Pour the batter into the skillet. Cover with an oven proof lid or foil, and bake about 45 minutes or until knife inserted comes out clean. Brush the top with butter, let stand a few minutes and serve.

French Onion Soup

Oh, that looks good! I've learned that there are two secrets to a great onion soup: one is the broth, the other is the onions. The broth, which is classically a beef broth would be delicious made from a short rib or a shank bone, but chicken stock makes a delicious soup and we have chicken stock bags (aka bag o' bones!) for $2, which is a great bargain. We also have del Carmen vegetable broth, which is quite tasty if you'd like to make a vegetarian soup.

The secret to making the onions is to use a wide variety and give them a slow roasting in the oven. I used red and yellow onions, both regular and cippolini, and even some green onions. Roast them in the oven in olive oil with a little sea salt until they are well caramelized. Add them to the broth and cook together for a bit before assembling the bowls. Ladle soup into crocks or oven-proof bowls, add a thick slice of crusty bread (stale or toasted is best, or use Companion's crostini!). Then put a few slices of cheese over the top--a couple of varieties makes the flavor a little more complex--let a couple corners hang over the the edge so when you broil it until brown and bubbly you get that crunchy burned on cheese to pick off the side. Oh, that's so good!
