Welcome to Week 34


Holiday Schedule

Please make sure you understand the holiday schedule and mark your calendars now! There will be no pickups the last week of the year, between Christmas and New Years. We will pretend the week doesn't exist, and those who would have picked up that week will pick up the following week instead. This means all half-share members will have an additional week off between pickups. So...

- If you are an ODD* week half-share member you will pick up December 14th (or 15th for Thursday pickup groups) and again January 4th (or 5th).
- If you are an EVEN* week half-share member you will pick up December 21st (or 22nd for Thursday pickup groups) and again January 11th (or 12th).
- If you are a full share member, you will pickup December 21st (or 22nd) and again January 4th (or 5th).
* you can tell what week we're on by looking at the first line of the newsletter each week! See? 34 is an even week.

We will be posting this every week this month, and also at the pickup sites. We don't know how else to inform you, so please make sure others who pick up your food are aware of the schedule.

Invoices Sent

If you have reached $30 in overages, you will have received an invoice by email stating the amount you owe. Please bring a check (or exact change only) to your next pickup and pay your invoice in a timely manner. Don't forget to include your pickup group on your check. We appreciate it.

Extras Available

Place your orders and trades by noon the day of your pickup to orders@fairshares.org. Don't forget to include your pickup group and name! Check the price list on the website for pricing on all the normally available items. If you are trying to make an even swap, be sure to include back up choices in case we run out of your selected item.

Roast Beast?
It's time to think about what special meat items you might want for your holiday celebration! Are you doing a roast? Will it be beef or pork? Or perhaps a turkey? We need to know any special requests this week so we can get the orders placed by Monday, since we take some deliveries only every other week. You can look on American Grassfed Beef's website to see what they offer. You can order for this week, but if we don't have it on hand, we'll order it for your next pickup.

Mangia Pasta (now Midwest Pasta, but we like the name Mangia better) has a great array of ravioli to add a little excitement to your dinner plate! We only have a few of each variety, so please give second choices. We sold out of a lot of them, so let us know if you wnat them for next week!

$12/lb. sockeye (strongest flavor, fattiest and reddest), coho (medium) and keta (mildest flavor, lowest fat, doesn't need to cook as long). Various sized fillets available. Order by the pound and we'll try to match it.

Timpano

The Beat of a Different Drum.
Timpano is the name of the spectacular dish we mentioned in last week's newsletter. Those of you who played in band or attend the symphony will recall the name of the big drums--that's right, timpani, so this dish is a big drum full of delicious food! If you google "timpano" you will find a number of websites with recipes, and a few videos to help you get excited about making it. We can attest to the fact that it's worth the trouble. The important thing in making this dish is to have all the components prepared ahead and set out, ready to go, so that when it's time to assemble it's a smooth process. Much of it can be prepared a day or so ahead so you don't have to spend the entire day on it, like we did. Hard boil your eggs, make your sauce and meatballs, grate and cube your cheese, you can even make the pastry dough the day before and roll it out right before it's time to start assembling. The preparation should be as festive as the meal, so put on some nice Italian music, make yourself a bevvie and have some fun!

Ha Ha Ha Ha
Lid: One; Human: Zero

I'm sure this wasn't at all funny to whoever had the fight with this lid, but it made us laugh to imagine the determination involved. Cartoon images of Wile E Coyote setting a TNT trap and other elaborate schemes come to mind.

Here's a simple solution offered by Michelle Wagstaff of Dry Dock Farms (who is also our connection to the Hiltys, who made that blasted lid so hard to get off). Take a butter knife and slip it up under the rim of the lid, where the thread begins. This will pop the seal and release the lid so it unscrews easily.

Now if the problem was that the lid was cemented on with dried jam, that solution may be no help at all. Try putting a rubber band around the side of the lid to give a better grip, or soak the jar and lid in hot water in hopes of loosening up the stickiness. Then make sure you rinse the lid and clean the threads before you put it back on, unless you like the challenge.

Butternut Bliss Soup

Butternut Squash Coconut Cream Kale Mushroom Soup
My mother in law made a delicious pumpkin soup with mushrooms in it that I ate over Thanksgiving. So when I saw the mercury falling on the thermometer, I knew it was time to create my own version. Keep in mind that I am making this up--I don't know how much of anything I actually used, so just run with it!

Ingredients
1 large butternut squash, 2-3 pounds, seeded, peeled, cut in 1-2 inch cubes (or use canned, easy!)
1 quart chicken broth (you have at least one quart of chicken broth in the freezer, right?)
a few sage leaves, fresh or dried
1 medium or large onion
1-2 T. butter
3-4 cloves garlic
1 bag (1/2 lb.) shiitake mushrooms, cleaned, stemmed and sliced
14 oz. can coconut milk or coconut cream (unsweetened)
1 bunch greens (kale, chard, spinach, beet tops, etc.), washed and cut or torn into bite sized pieces
1/3 c. pecan pieces, toasted (use about 1t. per serving)
Blue Heron Pomona's Ambrosia (apple syrup, about 1/2 t. per serving)
Companion 3 seed crostini

Process
Boil the squash in the chicken broth with the sage until soft. Use an immersion blender to puree the squash in the broth, or remove it with a slotted spoon and use the blender or food processor. Sauté onion in butter until it starts to brown, add mushrooms, garlic, and salt and pepper to taste. Cook until mushrooms release their juice and it cooks off. Add coconut milk to the soup, and bring just to the boil--don't let the coconut milk boil too much or it will separate. Add the mushrooms and the kale and let them cook together for a few minutes, to wilt the kale and heat it all through. Ladle into cups or bowls, top with a sprinkle of toasted pecan pieces and a generous drizzle of apple syrup (my favorite trick to add a little bling and transform a dish from okay to outstanding). Top with a couple Companion Three Seed Crostini. Welcome to heaven.

Winter Vegetable Soup

1 1/2# Beef or Pork Stew Meat
3 Med Yellow Gold Potatoes, quartered
2 Cups Large diced butternut squash
3 Carrots, cut in half, lenghtwise, then cut into 2"pieces
1 Med Sweet Onion, diced
1 tsp cumin or to taste
1 tsp cinnamon
1 12oz tub of del Carmen black bean soup
16oz Beef or vegetable broth or water
Salt and pepper to taste.
