Welcome to Fair Shares Week 2
Happy Easter and Happy Passover!
Nourishing Traditions. What are your favorite things about the holidays? Is it getting together with family? Watching parades or sports? Wearing fancy clothes and uncomfortable shoes? Or is it the food? For me, it's always the food. There are certain foods that mean certain holidays, sure, but anymore, the whole point is about enjoying a good meal with the people I love. And with family, it's about preparing it together as well.
We've all come to appreciate the importance of knowing where our food came from (that's one advantage of recruiting the whole family into working or volunteering at Fair Shares!), so we've gone from preparing the traditional foods of our childhood to preparing a variation based on what's available locally. It's brought us a new appreciation for the food we eat and allowed us the opportunity to experiment and add in new traditions. For returning members, we'd love to hear how Fair Shares has changed your approach to the holidays. Share your stories on the forum!

It's Easy Being Green!
Make every day Earth Day. We reuse and recycle and need your help! Not only are we helping the earth by recycling, we're helping our farmers and producers save money on packaging materials. Please note, we are not offering to do your recycling, and ask that you bring back only these returnables from Fair Shares: egg cartons you got from Fair Shares, half pint, pint and quart jars from Fair Shares. As we get into the produce season, there will be items that are bunched rather than bagged, so we encourage you to bring along some of your produce bags from previous weeks to help keep everything fresh.

Email Trades and Special Orders by noon on the day of your pickup to orders@fairshares.org
Please list trades (what you don't want) first, followed by what you want instead. Keep in mind that items may be in limited quantities, so please give a second choice, or be prepared to choose something at your pickup site. Feel free to order extra, but remember that trade credits don't carry over from week to week.
Kale: $4 /.5 lb. bag. Hooray for kale! Try kale chips in the oven
Lettuce: $4 /.5 lb. bag
Spinach: $4 / .75 lb. bag. Try making a spinach pesto for a change!
Parsnips: $4 / 1 lb. bag
Eggs: $4 / doz. It's Easter week! You don't even have to dye brown eggs before hiding them for the kiddies...but you probably ought to hard boil them.

Kitchen Tips
We apologize for not getting this helpful information into last week’s newsletter. If any items in your share have you baffled, just ask! Plus remember that we have an excellent resource in our fellow members! Share your recipes and kitchen tips with each other on the discussion forum.
Ozark Forest Mushrooms In the cooler months we’ll see more oyster mushrooms with just a few shiitakes (in the bottom of the bag, because they’re much sturdier than the oysters). To prep your oyster mushrooms, just trim the tiny bit of dirty, tough stem at the base and chop or tear up the rest. In the summer, it will be strictly shiitakes, which have a fairly tough stem. Pull off the stems, rinse and use for stocks, or compost. For all mushrooms, give a quick rinse and shake under cold water, don’t waterlog them! Sauteed in butter and garlic is as divine as it gets.
Mangia Pasta – Fresh pasta doesn’t take as long to cook as dry pasta. Test each shape to determine the proper cooking times. Separate the long pasta before adding it to boiling water unless you’re partial to the resulting big-blob single serving. This pasta enjoys romantic dinners with Ozark Forest Mushrooms, and they enjoy the company of Claverach shoots and Heartland Methuselah, or any cheese.

Food Lists Clarification
We said that you would be able to tell what you will be getting in the next several weeks by looking at the next food lists, meaning that if your pickup group is getting food list 2 this week, you could look at food list 3 to see what's coming next week. Generally, this will be true, but we're switching a lot around these first few weeks due to our bison shortage. So by weeks 4 and 5, you'll really be able to follow that rule of thumb. Sorry to confuse something that's already confusing. The one certain thing is that it's all good food, and we're keeping track of who has gotten what!
