Welcome to Week 17!
Farmers are Rock Stars
And that goes for the rest of the people who work outside in this heat. Let us give thanks for those who are willing to grow and raise our food, and do all the other necessary outdoor things so that we may eat and work in our comfy air-conditioned environments. Many of our farmers are starting their days before 5:00 a.m. in an attempt to stay cool, and yet they are failing miserably. How lucky are we? Thank you farmers!

Whose Check Is This?!?
If you are writing a check for an overage amount, and your name is not the one on the account, and you don't make a note of which pickup group you are in or put the account name on the check, we are taking your money and going out to dinner and a movie (or in some cases, we're buying ourselves a candy bar)! We can look up the amount of the check to try to determine who you are, but there are often a number of members with the same balance due, so do us and yourselves a favor and put the share name and pickup group on your check please.
Continued Egg Shortage
We do have a few eggs for sale, but not enough to put any in the shares. We expect to run out, so order up!
Extras Available
Email your order by noon to orders@fairshares.org, and please include your pickup group in your email. Remember that fresh produce is not tradable. Some items may be in short supply, so please leave an alternative choice if you plan to make an even trade.
Gobble Gobble
- Houston's Homegrown Turkeys: Paul Houston has 10-12 pound turkeys available now! How about a little Thanksgiving in July? We can pretend to have the cool weather while we're at it. There's nothing like a smoked turkey on the barby, MmmmMmm! $4.50/lb.
Grill Thrill
American Grassfed Beef makes awesome dry-aged steaks:
Sirloin: $9/8oz.
NY Strip or Ribeye: $13/8oz. or 2/$25
Filet Mignon: $11/6 oz. or $15/8oz.
Flank Steak or Skirt Steak: $9.50/lb. (they range in size from slightly under 1lb. to 1.5 lbs.) Fajitas!
Ground Beef ($6/lb.) and Ground Lamb ($9.10/lb.) mixed together make the most awesome burger--just add a little garlic and hot pepper--zing-a-ling!

Pork-Onion Patties: $5.75/lb. These are really tasty and satisfying burgers, four to a package, averaging just over a pound. (Priced per pkg.)
Pork Chops: $6.00/lb.
Sausages-a-plenty: We have a variety of Geisert ($5.50) and Hinkebein ($6.50) link sausages and brats available.
Pork Shoulder: $3.00/lb. We have one whole and a couple of halves (7-8ish pounds) available for pulled pork, and can get more for next week. Order up!
Bacon: $6.75/lb. Priced as marked. Did someone say BLTs? No? Well BLTs!
Salume Beddu Mostarda: $7.50. So good on crackers with cheese or with meat. Yum!
Salume Beddu Fig Tapenade: $9.00. A combination of kalamata olives and figs to send you over the moon. Great with chevre. Mmm hmm.
Mangia Pasta Ravioli: Goat Cheese Ravs--$10.00, Mushroom or Three Cheese Ravs--$8.00.
Fruit Loops
Blueberries: $6/pt.
Cantaloupe: $4.00 ea.
Honeydew: $5.25 ea. Sweet and very tasty. (I'm hoping we can get more of these, but not sure yet.)
Watermelon: $7.50 ea. Mid size, seedless, sweet, summery deliciousness. Party on, whether you spike it or not.
Second To None
Tomato Seconds! These are beautiful seconds (some say better than some of the firsts). $1/lb. Get saucy. * Note: we're down to a few pounds on these. If you want a lot, we can order them for you for next week.
Green Peppers: $2.00/lb. Did someone say fajitas? Yes, that was me, earlier.
Hot Banana Peppers: $1/6 These seem pretty hot when you first start cooking them, but they mellow into a great medium heat in whatever you're cooking. Great with pan-fried corn! Os stuffed with cheese and baked!
Jalapeños: $1/8 Peach-Tomato Salsa anyone? Yes, please!
Asian Eggplant: $2/lb. Slice and roast with garlic and olive oil. 425F twenty minutes per side. Sprinkle with grated cheese and put in the oven to melt. Oh. My. Goodness.
Sweet Corn: $2.25/4ears
Beets or Kohlrabi: $2.00/lb. Roast them up and toss with your favorite vinaigrette, some Claverach Shoots, and a little soft cheese for a lovely summer salad. Don't forget the pecans!
Missouri Pecans: $4.25/.5 lb. Sweet little things. Great for desserts, salads or as an addition to your roasted eggplant dish (don't forget the cheese!).
Onions--sweet yellow, sweet white or sweet red: $2.00/lb. Sweet! Buy a few pounds, slice them up, caramelize them and store them in the fridge for an amazing addition to salad dressings, pasta and rice dishes, quesadillas, fritattas, soups and veggies. Or wait, how about fajitas! Yum.
Shallots: $2.50/.5 lb. These apparently are difficult to grow, and Bob Lober of St. Isidore Farm has said he won't do them next year, so get 'em while you can!
Tomatillos: $2.25/lb. Yay, salsa! Roast them in the oven or use them raw to make delicious salsa. Here's some info on how to use them.
Carrots: $3.25/lb.
Savoy Cabbage: $3.00
Shiitake mushrooms: $7.00

What's For Dinner
What Kind of Cook Are You?
Do you find a recipe that sounds good and go get all the ingredients, or do you look in the fridge and figure out what you're making for dinner? Years of Fair Shares and market shopping has turned us into the latter, which in my opinion, makes one a more creative cook. On the other hand, if you don't explore those recipes, it's easy to get stuck in a rut and prepare stuff the same way over and over again. Well, so be it, I love olive oil and garlic and find they go with everything. So here's what was for dinner when I didn't feel like cooking.
Mangia Ravioli with sautéed mushrooms, onions and garlic:
This needs no instructions, honestly, but here you go anyway. Put on a pot of water to boil for the ravioli, and start the onion sauteing in olive oil in a heavy skillet. When it turns translucent, add the garlic and mushrooms (we like our garlic less cooked in this). Add sea salt and cook until soft and golden. When the water boils, break the frozen ravioli into individual pieces and drop into boiling water, being careful not to splash the boiing water onto the sensitive part of your wrist that will burn for hours afterward.
Eggplant-zucchini roast with onions, garlic and cheese:
You'll want to start this first and do the ravioli dish while this is roasting.
Slice eggplant, zucchini (if you have any left--we're out!) and onion and toss in or brush with olive oil. Place in single layer on roasting pan, sprinkle with sea salt and bake in a 425F oven until golden on the bottom (use two pans or do it one pan at a time--single layer is importat.). Turn and roast on the other side until golden. Shred a little cheese over half and layer with the other half of the veggies. Sprinkle a little more cheese on and pop it back in the oven. Turn off the oven--this is just to melt the cheese and keep it warm untilt he rest of the meal is ready.
To serve, place 5 or 6 ravioli on the plate, top with some of the mushroom mixture. Dish a bit of the roasted veggies and cheese next to that and top it all with some sliced, raw tomatoes and chopped fresh basil. Serve with a nice cold Schlafly Beer. Ahh, bliss.

Market Sandwiches
From my friend Beki Marsh. I substitute "Fair Shares" for "farmers' market" and "grocery store", and I substitute Fair Shares items for anything not available.
1. Go to farmers' market: buy Japanese eggplant, zucchini, basil and red onion
2. Go to grocery store and buy mozzarella & ciabatta bread
3. make sure you have good quality olive oil
Preparation:
1. slice eggplant & zucchini in 1/4 width lengthwise; salt lightly & let sit for 5 min
rinse and pat dry
2. cut red onion in 1/2 thick round slices
3. coat veggies with film of olive oil
4. grill for 5 min ea side turning for a total of 20 min until soft & lightly colored
Meanwhile…slice mozzarella in 1/4 slices
wash basil
toast bread then slice 1/2 lengthwise
cut tomato in 1/4--1/2" round slices
Construction:
1. strip down to your skivvies...great sandwich but messy
2. pour oil on cut side bread
3. top with sliced tomato
4. salt & pepper
5. top with veggies in order you want including basil
6. open mouth wide

The Incredible Edible Fig
Ivan's Figs are coming in! We'll be including these in two shares per week, and everyone will get an opportunity to try them. If you have never tried a fresh fig, you are in for a treat. They are like no other fruit. These are picked ripe and ready to eat, so eat them tonight! They mold quickly, but don't be afraid, just wipe it off and eat it. The splits on the bottom will create a blue sort of waxy-like substance to try to seal itself. Many people mistake this for mold, but it is not. It is edible, but if you are concerned, just wipe it off with a paper towel and pop that baby in your mouth. Many people like to eat them with a bit of chevre (or quark) and a drizzle of aged balsamic vinegar or Blue Heron Apple Syrup. Heaven, I tell you, heaven. But I usually just eat them as is.
